Beat 3 eggs + pinch of salt until smooth w/ a fork
Add a slab of butter to a pan on med-lo heat
Stir the pot constantly (or swirl)
Once thickened, scrape eggs to keep them moving
Once it's to your desired softness, add a big dab of butter and mix in until glossy & glazy
